Elaboration

Infuse the milk with cinnamon and lemon peel until the milk boils.

 

Blanch the rice in boiling water for three minutes for the rice to lose the starch, Strain and refresh. When the milk is boiling, take out the lemon peel and the cinnamon and add the rice in the milk.

 

Let it boil gently and stir frequently for at least 30  minutes, add the sugar and let it boil again while stirring. Let it cool.
